Potato Soup With Butter Dumplings

Ingredients
  Oleo/Butter 1⁄4 Cup (4 tbs)
  Onion 1 Medium, chopped
  Water 4 Cup (64 tbs)
  Potatoes 3 Pound, peeled and diced
  Stalk celery 1 , chopped
  Salt 1 Tablespoon
  Pepper 1⁄4 Teaspoon
  Chopped celery 2 Tablespoon
  Sour cream 8 Ounce
Directions

Melt butter in large pot.
Add onions and saute until tender.
Add water; bring to boil.
Add potatoes, celery, salt, pepper and parsley.
Reduce heat and simmer 15 minutes.
Drop dumpling batter into soup by teaspoon.
Cover and simmer 10 minutes.
Remove from heat and gradually stir in sour cream.
Heat thoroughly, but do not boil.
