Elegant Oyster Soup
|Oysters||2 Dozen (fresh, shelled)|
|Milk||4 Cup (64 tbs)|
|Cream||1⁄2 Cup (8 tbs), whipped|
|Parsley||1 Teaspoon, finely chopped (fresh)|
Remove all shell pieces from oysters.
Chop oysters, reserving liquor.
Melt butter in skillet; gradually add flour and seasonings, stirring constantly until smooth.
Alternately add milk and oyster liquor stirring constantly until mixture boils.
Add oysters and simmer 5 minutes.
If soup is too thick, add more milk.
Pour into heated tureen.
Top each serving with 1 teaspoon whipped cream and sprinkle lightly with parsley.
