Cheese Broccoli Soup
|Frozen chopped broccoli||10 Ounce (1 Package / 2 1/2 Cups)|
|Chopped onion||3⁄4 Cup (12 tbs)|
|Canned chicken broth||14 1⁄2 Ounce (1 Can)|
|Shredded cheddar cheese||1 Cup (16 tbs)|
|Half and half/Milk||1 Cup (16 tbs)|
|Grated lemon peel||1 Teaspoon|
In colander, thaw broccoli under hot tap water about 30 seconds.
In large saucepan, cook and stir onions in butter about 2 minutes.
Stir in flour.
Add broth and half and half.
Heat and stir until mixture comes to a boil.
Cook and stir 1 minute.
Add broccoli and puree in blender or food processor; return to pan.
Add cheese, lemon peel and pepper.
Heat and stir until cheese melts.
