Green Herb Soup
|Butter||20 Milliliter (1.5 Tablespoon)|
|Green onions||6 , whites and greens sliced|
|Potato||1 Large, peeled and diced|
|Lettuce leaves||4 , washed and torn into small pieces (Outer)|
|Water||500 Milliliter (2 Cups)|
|Lemon||1⁄2 , juiced|
|Fresh herbs||45 Milliliter, chopped (3 Tablespoon)|
|Cream||125 Milliliter (1/2 Cup)|
1 In a pan, melt butter.
2 Add green onions and fry over low heat until tender.
3 Add diced potato and stir for 1 minute.
4 Add lettuce to the pan.
5 Cover with water and bring to a boil.
6 Simmer for 20 minutes.
7 Stir in lemon juice and pepper.
8 In a blender jar, transfer the mixture and add in herbs.
9 Blend until smooth or push soup through a sieve, then add herbs.
10 Add cream and chill.
11 Serve chilled in individual soup bowls.
