Watercress And Leek Soup

Ingredients
  Butter 30 Milliliter (2 Tablespoons)
  Green onions 2 , chopped
  White of leek 1 Large, chopped
  Flour 45 Milliliter (3 Tablespoons)
  Potatoes 4 Medium, peeled and sliced
  Hot chicken stock 1 Liter (4 Cups)
  Thyme 1⁄4 Teaspoon
  Anise 1⁄4 Teaspoon
  Fresh watercress 1 Bunch (100 gm), chopped
  Salt To Taste
  Pepper To Taste
Directions

Place butter, onions and leek in casserole.
Cover and microwave 4 minutes.
Mix in flour, salt and pepper.
Microwave 4 minutes uncovered.
Add potatoes, chicken stock and seasonings; cover and microwave 7 minutes.
Stir well.
Add watercress, season, and microwave 5 minutes covered.
Remove cover; finish microwaving 3 minutes.
