Chilled Pea Soup
|Diced raw potatoes||1 Cup (16 tbs)|
|Peas||1 Cup (16 tbs) (Fresh Or Frozen)|
|Green onion with tops||2 , sliced|
|Regular strength chicken broth/Homemade chicken broth||1 1⁄2 Cup (24 tbs)|
|Curry powder||1⁄8 Teaspoon|
|Whipping cream/Half and half||1 Cup (16 tbs)|
|Chopped chives||1 Teaspoon|
In a 3-quart pan, combine potatoes, peas, green onions, chicken broth, and curry powder.
Bring to a boil; cover, reduce heat, and simmer until potatoes are just tender when pierced (about 20 minutes).
In a blender or food processor, puree soup, a portion at a time, until smooth.
Stir in cream.
Cover, refrigerate, and serve cold.
Garnish with paprika and chives
