Chilled Pea Soup

Ingredients
  Peas 2 Cup (32 tbs), shelled (or 110-ounce package frozen peas)
  Lettuce 2 Cup (32 tbs), shredded
  Chicken broth 4 1⁄4 Ounce, can
  Water 1⁄3 Cup (5.33 tbs)
  Tomato juice 1⁄4 Cup (4 tbs)
  Green onion 1⁄4 Cup (4 tbs), finley chopped
  Snipped parsley 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper white 1⁄4 Teaspoon
  Dried thyme 1⁄4 Teaspoon, crushed
  Whipping cream 1⁄2 Cup (8 tbs)
Directions

In 2-quart saucepan combine peas, lettuce, chicken broth, water, tomato juice, onion, parsley, salt, white pepper, and thyme.
Bring to boiling.
Reduce heat; cover and simmer 20 minutes.
Turn into blender container; cover and blend till smooth.
Cool slightly; stir in whipping cream.
Cover and chill.
If desired, garnish with sour cream and fresh mint.
