Kota Soupa Avgolemono
|Chicken stock||3 Pint|
|Cooked rice||1 Cup (16 tbs)|
|Eggs||3 , separated|
|Lemons||2 , juiced|
|Cold water||1 Tablespoon|
Bring stock to a boil, add rice.
Season stock and rice with salt and pepper.
Beat egg whites, then fold in yolks until frothy, add lemon juice and water.
Take a ladleful of the hot stock and add it slowly to the egg mixture.
Add another ladleful, then pour this back into the pan and stir well, keeping the soup away from the fire.
