Gumbo

Ingredients
  Bacon grease/Cooking oil 1⁄2 Cup (8 tbs)
  Green peppers 2 , minced
  Onions 4 Medium, minced
  Celery stalks 8 , minced
  Flour 4 Tablespoon
  Frozen cut okra 50 Ounce, Defrosted (Five 10 Ounce Package)
  Canned tomatoes 3 Pound (Three 1 Pound Cans)
  Worcestershire sauce 2 Tablespoon
  Tabasco 2 Tablespoon
  Kitchen bouquet 2 Tablespoon
  Vinegar 2 Tablespoon
  Gumbo file 1 Tablespoon
  Water 4 Quart
  Shrimp 3 Pound
  Crabmeat 2 Pound
  Clams with juice 2 Can (20 oz)
  Oysters 1 Quart
  Salt To Taste
  Pepper To Taste
Directions

Heat bacon grease and cook green pepper slowly until tender.
Add onions and celery, and cook until tender and brown, stirring.
Add flour and blend.
Remove from heat.
In a separate pot cook okra until no longer stringy and brown at edges.
Drain tomatoes thoroughly, put through a food grinder and add to okra.
Cook and stir for 15 minutes.
Combine vegetable and flour roux with okra mixture, juices from tomatoes, salt, pepper, Worcestershire sauce and Tabasco to taste.
Add Kitchen Bouquet, vinegar, gumbo file and 1 quart water.
Cook uncovered for 1 hour.
Add 3 quarts water and simmer 3 hours.
Add shrimp, crab, clams and oysters.
Heat and serve.
