Creamy Spinach and carrot soup
|Chopped onions||1 Cup (16 tbs)|
|All purpose flour||2 Tablespoon|
|Half and half||1 Cup (16 tbs)|
|Chicken broth||10 3⁄4 Ounce (homemade or store bought)|
|Shredded carrot||1 Cup (16 tbs)|
|Frozen chopped spinach/Fresh chopped spinach||10 Ounce (thawed and drained)|
|Orange zest||1⁄4 Teaspoon|
In a 2qt saucepan melt the butter; add onions.
cook over medium heat stirring occasionally, until onions are tender
stir in flour until smooth and bubbly.
stir in half and half and chicken broth.
add remaining ingredients except orange peel.
continue cooking over low heat, stirring occasionally, until soup is heated through.
Garnish with Orange zest
