Blender Broccoli Soup
|Broccoli||1 1⁄2 Pound, stemmed and chopped|
|Canned chicken broth||3 Cup (48 tbs)|
|Celery stalks||2 , chopped|
|Green onions||2 , chopped|
|Dried italian herb seasoning||1⁄2 Teaspoon|
|Whipping cream||3⁄4 Cup (12 tbs)|
|Freshly ground pepper||To Taste|
Combine first 5 ingredients in heavy large saucepan.
Cover and cook Over medium heat until broccoli is tender, about 6 minutes.
Transfer to blender in batches and puree until smooth.
Return to saucepan.
Stir in cream.
Cook over low heat until warmed through.
Do not boil.
Season with salt and freshly ground pepper.
Can be prepared one day ahead.
Cover and refrigerate.
Rewarm over medium heat.
