Cabbage Soup

Ingredients
  Vegetable oil 3 Tablespoon
  Onion 1 Medium, finely chopped
  Carrot 1 , diced
  Celery leaves 1 , diced
  Green cabbage 1 Small, shredded
  Caraway seeds 1⁄2 Teaspoon
  Homemade vegetable broth/Chicken broth 1 Quart
  Salt 1⁄2 Teaspoon
  Ground black pepper 1⁄4 Teaspoon
  Spinach/Half a 10 ounce bag / 110-ounce package chopped frozen, thawed 1⁄2 Pound, trimmed and washed
Directions

1. Heat the oil in a large heavy kettle and saute the onion until tender but not browned. Add the carrot, celery, cabbage, and caraway seeds and cook, stirring, for 5 minutes.
2. Add the broth, salt, and pepper. Bring to a boil, cover, and simmer for 30 minutes. Add the spinach and cook for 5 minutes longer.
