|Homemade vegetable broth/Chicken broth||1 Quart|
|Ground black pepper||1⁄4 Teaspoon|
|Spinach/Half a 10 ounce bag / 110-ounce package chopped frozen, thawed||1⁄2 Pound, trimmed and washed|
1. Heat the oil in a large heavy kettle and saute the onion until tender but not browned. Add the carrot, celery, cabbage, and caraway seeds and cook, stirring, for 5 minutes.
2. Add the broth, salt, and pepper. Bring to a boil, cover, and simmer for 30 minutes. Add the spinach and cook for 5 minutes longer.
