Green Tomato Soup
|Butter||1⁄4 Cup (4 tbs)|
|Onions||2 , sliced|
|Green tomatoes||8 , washed and cut into chunks|
|Vegetable broth/Chicken broth||1 Cup (16 tbs) (Homemade)|
|Milk||1 Cup (16 tbs)|
|Freshly ground black pepper||To Taste|
|Plain yogurt||1⁄4 Cup (4 tbs)|
|Chopped chives/Chopped dill weed||1 Tablespoon|
1. Melt the butter in a heavy skillet and saute the onions and green tomatoes until soft but not brown. Puree in the container of an electric blender or food processor, or push through a food mill. Add the broth.
2. Blend the arrowroot with the milk and add to tomato mixture. Bring to a boil, stirring until the mixture thickens. Season with salt and pepper to taste.
