Mock Bird's Nest Soup
|Long rice||4 Ounce (1Bundle From Chinese Market)|
|Dried mushrooms||4 (Fresh Or Canned May Be Used)|
|Chicken broth||6 Cup (96 tbs)|
|Monosodium glutamate||1⁄8 Teaspoon|
|Salt||1 1⁄2 Teaspoon|
|Ground pork||1 Cup (16 tbs)|
|Ground ham||1⁄2 Cup (8 tbs)|
|Water chestnuts||1⁄2 Cup (8 tbs), chopped|
|Egg whites||2 , slightly beaten|
|Chopped chinese parsley||1 Tablespoon|
Cut long rice with scissors in 1/4 inch lengths and soak in hot water for 30 minutes.
Soak dried mushrooms in warm water until soft; wash thoroughly and remove stems, finely chop caps.
To the broth add mushrooms, seasonings, meat and water chestnuts, simmer for 30 minutes.
Add drained long rice and simmer 5 mins.more.
Remove from heat and stir in egg whites.
