Turkey Soup

Ingredients
  Turkey carcass 1
  Chopped onion 1
  Parsley 1 Teaspoon
  Carrots 1 Cup (16 tbs)
  Celery top and leaves 1 Cup (16 tbs)
  Noodles 4 Ounce (1/2 Of 8 Ounce Package)
  Salt To Taste
  Pepper To Taste
Directions

1. Cover the carcass with water.
2. Add onion, parsley, salt and pepper.
3. Cover and allow to simmer for 2-3 hours.
4. Strain into another large kettle.
5. Return to heat, and add vegetables and noodles.
6. Allow to boil 10-15 minutes.
7. Season as desired.
