Sri Lankan Consomme
|Diced tart apples||3 Cup (48 tbs)|
|Minced onion||3⁄4 Cup (12 tbs)|
|Chopped celery leaves||1 Cup (16 tbs)|
|Unsalted butter||3 Tablespoon|
|Curry powder||2 Teaspoon|
|Beef consomme||4 Cup (64 tbs)|
|Half and half||3 Cup (48 tbs)|
Saute apples, onion and celery leaves in butter 10 minutes; do not brown.
Sprinkle with curry and cook, stirring, 3 minutes.
Add the consomme, bring to boil, lower heat and simmer, uncovered, 15 minutes.
Strain and adjust seasonings.
Add cream and reheat.
