Double Tomato Soup

Ingredients
  Butter 1 Tablespoon
  Chopped onion 1 Cup (16 tbs)
  Shredded carrot 3⁄4 Cup (12 tbs)
  Minced garlic 1 Tablespoon
  Minced shallots 1 Tablespoon
  Sugar 1 Teaspoon
  Fresh ground pepper 1⁄4 Teaspoon
  Salt 1⁄8 Teaspoon
  Basil leaves 10
  Sun dried tomato halves in oil with herbs 3 , drained
  Organic diced tomatoes 2 Can (20 oz), undrained
  Fat free low sodium beef broth 1 Can (10 oz)
  Heavy cream 1⁄2 Cup (8 tbs)
Directions

Melt butter and add onion, carrots, garlic, adnd shallots.
Cook until vegetables are tender.
Add sugar, salt, pepper and few basil leaves.
Cook and then add sun dried tomatoes, diced tomatoes and chicken broth.
Bring the mixture to a boil.
Let it simmer for an hour.
Remove it from heat.
Blend the mixture until smooth.
Add heavy cream and garnish with basil leaves.
