Rhubarb soup is a refreshing soup and can be served at the beginning or end of a meal. Just enough sugar allows the rhubarb flavor to shine through without tasting too sweet or tart. 2 Pound, chopped finely
1 Large, juiced
1 Cup (16 tbs)
1. In a large pot, combine the rhubarb, half of the orange zest, orange juice, sugar and water.
2. Cook until rhubarb is tender.
3. Let it cool and strain it.
4. Put it into fridge and let it cool.
