Cantaloupe Soup

Ingredients
  Cantaloupe 1 Large, seeded and diced
  Butter 5 Tablespoon
  Sugar 2 Teaspoon
  Grated lemon peel 1 Teaspoon
  Ground ginger 1 Pinch
  Salt 1 Pinch
  Milk 2 1⁄2 Cup (40 tbs)
  Lemon juice/White rum 2 Tablespoon
  Mint sprig 3
Directions

Reserve 1 cup diced cantaloupe (or scoop out balls) for garnish.
Cook remainder in butter with sugar, lemon peel, ginger and salt, covered, until soft.
Add milk, bring to boil, lower heat and simmer 10 minutes.
Puree, cool and chill.
Adjust seasonings with lemon juice.
Garnish with reserved cantaloupe and mint.
