Avocado Soup With Golden Caviar
|Chopped green onions||3⁄4 Cup (12 tbs)|
|Ripe avocados||2 , peeled, seeded and chopped|
|Chicken stock||4 Cup (64 tbs)|
|Lemon/Lime||1 , juiced|
|Heavy cream||1 Cup (16 tbs), whipped|
|Golden caviar grains||3 (For Serving)|
Melt the butter in a saucepan.
Saute the green onions 3 to 4 minutes.
Add the avocados and stir around.
Add the stock and lemon or lime juice; bring to a boil.
Cook 5 minutes.
Puree in blender, food processor, or food mill.
Season with salt and pepper.
Fold in the whipped cream.
Garnish with the caviar.
