Bell Pepper Soup
|Bell pepper||2 Cup (32 tbs), finley minced|
|Onions||1 Cup (16 tbs), minced|
|Carrot||1⁄4 Cup (4 tbs), minced|
|Garlic||1 Clove (5 gm), minced|
|Bacon slices||3 , minced|
|Peeled and chopped ripe tomatoes||2 Cup (32 tbs)|
|Beef stock/Chicken stock||4 Cup (64 tbs)|
|Black pepper||1⁄4 Teaspoon|
|Basil||1⁄2 Teaspoon, minced|
|Round steak||1 Pound|
Saute bell pepper, onion, carrot, garlic and bacon until bacon is slightly browned.
Add tomatoes, stock, salt, pepper, basil and meat.
Cover, bring to boil, lower heat and simmer 45 minutes.
Adjust seasonings to taste.
