Fuzzy melon soup is perfect as an yummy lunch appetizer. I remember my nanny making melon soup when I used to refuse taking it otherwise. Instead of taking small bites of your melon, fuzzy melon soup can make an excellent dish for a chilly afternoon.
Chinese chicken broth/Pork broth
6 Cup (96 tbs)
1 , beaten
Scrape fuzz off melon and cut melon into bite-size slices.
Simmer stock and shrimp 20 minutes.
Bring stock to boil, add melon, and cook 5 minutes after stock returns to boil.
Drizzle egg into soup and cook and stir 2 minutes.
The egg should form long, slender strands.
