Fuzzy Melon Soup
|Chinese chicken broth/Pork broth||6 Cup (96 tbs)|
|Dried shrimp||1 Tablespoon|
|Egg||1 , beaten|
Scrape fuzz off melon and cut melon into bite-size slices.
Simmer stock and shrimp 20 minutes.
Bring stock to boil, add melon, and cook 5 minutes after stock returns to boil.
Drizzle egg into soup and cook and stir 2 minutes.
The egg should form long, slender strands.
