Sweet Potato Soup

How can one possibly make Sweet Potato Soup? This was haunting me till I grabbed a cook book from the nearest store. Most of the time we are clueless about the cooking options with sweet potatoes. But this amazingly interesting yet easy preparation can make your cooking simpler. The USP for this dish is no doubt the bacon fat in which the Sweet Potato Soup is prepared. Why dont you folks try this out and give your views?
Ingredients
  Chopped onions 1 Cup (16 tbs)
  Celery ribs 3 , chopped
  Sweet potatoes/Yams 1 Pound, peeled and sliced
  Bacon fat 1 Tablespoon
  Chicken stock 6 Cup (96 tbs)
  Minced fresh parsley 1⁄4 Cup (4 tbs)
  Salt To Taste
  Black pepper To Taste
  Freshly grated nutmeg To Taste
  Sour cream 1⁄2 Cup (8 tbs)
Directions

Cook onions, celery and sweet potatoes in bacon fat, covered and stirring often, 5 minutes.
Add stock, cover, bring to boil, lower heat and simmer until soft.
Puree, add parsley and reheat.
Season with salt, pepper and nutmeg.
Pass a bowl of sour cream.
