Sweet Potato Soup
|Chopped onions||1 Cup (16 tbs)|
|Celery ribs||3 , chopped|
|Sweet potatoes/Yams||1 Pound, peeled and sliced|
|Bacon fat||1 Tablespoon|
|Chicken stock||6 Cup (96 tbs)|
|Minced fresh parsley||1⁄4 Cup (4 tbs)|
|Black pepper||To Taste|
|Freshly grated nutmeg||To Taste|
|Sour cream||1⁄2 Cup (8 tbs)|
Cook onions, celery and sweet potatoes in bacon fat, covered and stirring often, 5 minutes.
Add stock, cover, bring to boil, lower heat and simmer until soft.
Puree, add parsley and reheat.
Season with salt, pepper and nutmeg.
Pass a bowl of sour cream.
