Quick Beef Soup
|Lean ground beef||1 1⁄2 Pound|
|Chopped onion||1 Cup (16 tbs)|
|Garlic||2 Clove (10 gm), finely chopped|
|Water||6 Cup (96 tbs)|
|Beef bouillon cubes||6|
|Uncooked orzo||1⁄2 Cup (8 tbs)|
|Vegetables||1 1⁄2 Cup (24 tbs) (Frozen Peas, Carrots And Corn Vegetable Blend)|
Cook beef, onion and garlic in large saucepan over medium-high heat until beef is brown, stirring to separate meat; drain fat.
Puree tomatoes with juice in covered blender or food processor.
Add tomatoes, water, bouillon cubes and pepper to meat mixture.
Bring to a boil; reduce heat to low.
Simmer, uncovered, 20 minutes.
Add orzo and vegetables.
Simmer 15 minutes more.
