Picante Black Bean Soup
|Bacon slices||4 , diced|
|Onion||1 Large, chopped|
|Garlic||1 Clove (5 gm), minced|
|Canned black beans||30 Ounce (Undrained)|
|Canned beef broth||14 Ounce (1 Can)|
|Water||1 1⁄4 Cup (20 tbs)|
|Picante sauce||3⁄4 Cup (12 tbs) (Pace)|
|Oregano leaves||1⁄2 Teaspoon, crushed|
|Sour cream||1 Tablespoon|
Cook bacon over medium-high heat in large saucepan until crisp.
Remove to paper towels; set aside.
Add onion and garlic to drippings; cook and stir 3 minutes.
Add beans, broth, water, 3/4 cup picante sauce, salt and oregano.
Cover and simmer 20 minutes.
Ladle into soup bowls; dollop with sour cream.
Sprinkle with reserved bacon.
