Ingredients
  Chicken broth 6 Cup (96 tbs)
  Carrots 4 , peeled and chopped
  Leeks 3 , washed and chopped (Use White Part)
  Onion 1 , chopped
  Spinach 2 Cup (32 tbs), chopped
  Lettuce 1 , chopped
  Potatoes 4 , peeled and diced
  Turnips 2 , peeled and chopped
  Parsnip 1 , peeled and chopped
  Ground pepper To Taste
  Salt To Taste
  Skim milk 1 Cup (16 tbs)
  Shallots 2 , chopped
  Ground black pepper To Taste
Directions

In a saucepan, heat broth.
Add vegetables.
Bring to a boil.
Cover.
Over low heat, simmer 20 minutes or until vegetables are tender.
Let stand to cool slightly.
In a blender, puree mixture.
Season to taste with salt and pepper.
Return soup to saucepan.
Reheat.
Pour into soup tureen.
Swirl milk into mixture.
Sprinkle with chopped shallots, if desired.
