Ingredients
  Butter 2 Tablespoon
  Onion 1 Small, minced
  Potatoes 3 , peeled and minced
  Cauliflower 1 Small, in florets
  Chicken broth 6 Cup (96 tbs), heated
  Basil 1⁄2 Teaspoon
  Thyme 1⁄2 Teaspoon
  Bay leaf 1
  Shallots 1⁄4 Cup (4 tbs), chopped
  Salt To Taste
  Pepper To Taste
Directions

In a saucepan, over moderate heat, melt butter.
Add onion.
Cover.
Cook 3-4 minutes until tender but not browned.
Add potatoes and cauliflower.
Continue cooking 1-2 minutes.
Season with salt and pepper.
Pour in broth.
Add mixed herbs.
Bring to a boil.
Cover.
Over low heat, simmer 40 minutes.
In a blender, puree mixture.
Adjust seasoning.
Sprinkle with chopped shallots.
