Peach And Plum Soup
|Water||2 Cup (32 tbs)|
|Peeled peach slices||1 Cup (16 tbs)|
|Plum slices||1 Cup (16 tbs) (Santa Rosas)|
|Sugar||1⁄2 Cup (8 tbs) (Or To Taste)|
|Lemon juice||1 Tablespoon|
|Peach slice/Plum slices||3|
In a saucepan, bring water to a boil and simmer fruit slices 15 to 20 minutes or until soft.
Whirl in a blender and pour through a wire strainer (or force mixture through a wire strainer); discard pulp.
Add sugar to taste.
Blend cornstarch with a small amount of juice; add to fruit mixture and quickly bring to a boil, stirring to prevent lumping.
Stir in lemon juice.
