Cheesy Fish Soup
|Fresh fish fillets/Frozen fish fillet||1 Pound|
|Fresh shrimp/Frozen shrimp||1 Pound|
|Onion||1⁄4 Cup (4 tbs), finely chopped|
|Carrots||1 Cup (16 tbs), finely chopped|
|Celery||1⁄3 Cup (5.33 tbs), diced|
|Chicken broth||2 Cup (32 tbs)|
|Milk||3 Cup (48 tbs)|
|Processed cheese spread||1⁄2 Cup (8 tbs)|
If using frozen fish and shrimp, thaw first.
Dice fish fillets.
Mix with shrimp.
In a saucepan, melt butter.
Saute vegetables until onion is transparent.
Add flour, salt and paprika.
Gradually stir in chicken broth and milk.
Continue stirring until mixture thickens.
Add fish and shrimp.
Simmer 5 minutes or until fish is cooked.
Fold in cheese.
