Meat & Cucumber Soup
|Soy sauce||1 Tablespoon|
|Sesame oil||1 Teaspoon|
|Meat||250 Gram, cut into strips|
|Chicken stock||1 1⁄2 Liter|
|Cucumber||200 Gram, cut into paper thin slices|
|Rice vinegar||1 Tablespoon|
In a bowl, mix together soy sauce and sesame oil.
Stir in meat to coat and leave for 30 minutes.
Bring chicken stock to the boil; season with salt and pepper.
Reduce heat so stock just simmers.
Lift meat from bowl, add to stock and poach for 2 minutes.
Remove meat and keep warm.
Add cucumber to pan and return to the boil.
Reduce heat so stock simmers, add meat and vinegar and cook for 4 minutes.
