Seasonal White Bean Soup

Chef Keith Snow creates a delicious seasonal White Bean Soup.
Ingredients
  Bacon fat 1 Tablespoon
  Extra virgin olive oil 1 Tablespoon
  White beans 250 Gram
  Rosemary 1 Tablespoon
  Thyme 1 Tablespoon
  Onion 1
  Carrot 1
  Celery 1
  Chicken broth 4 Cup (64 tbs)
  Parmigiano reggiano 1⁄4 Cup (4 tbs)
  Salt To Taste
  Black pepper To Taste
Directions

Get a heavy duty cast iron pan and take extra virgin olive oil in it.

Put a little bit of bacon fat and we start with a little bit of onion, carrot and celery. Mix for a few minutes.

Take diced tomatoes and add it to the pan.

Then add herbs, 1 tbsp of rosemary and a table spoon of thyme. And goes in the white beans.

Then add about 3-4 cups of organic chicken broth, little seasoning salt and pepper. Mix all ingredients.

Put the heavy lid and cover the pot. Lower the flame and wait for it to cook.

Blend the cooked bean with a hand blender.

Put a little soup in the plate and garnish with parmigiano reggiano cheese.
