Pioneer Potato Soup
|Milk/Half and half||1 Cup (16 tbs)|
|Chicken stock||1 Quart|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Marjoram/Dill weed / cumin||1⁄2 Teaspoon|
|White pepper||1⁄8 Teaspoon|
|Sliced carrots||2 Cup (32 tbs)|
|Potatoes||4 , chopped|
|Paprika||To Taste (For Garnish)|
|Sliced green onions||1 Teaspoon (For Garnish)|
|Cooked crumbled bacon||1 Teaspoon (Crisp, For Garnish)|
|Chopped pimiento||1 Teaspoon (For Garnish)|
|Snipped chives/Parsley / grated parmesan cheese||1 Teaspoon (For Garnish)|
1. Combine all ingredients except milk, flour, and garnishes in a large saucepan. Bring to boiling; simmer 30 minutes.
2. Gradually add milk to flour, stirring until smooth. Stir into soup.
3. Bring soup to boiling; boil 1 minute, stirring constantly.
4. Garnish as desired.
