Apple Chicken Soup

Ingredients
  Apples 5
  Lemon juice 2 Tablespoon
  Butter 1 1⁄2 Tablespoon
  Onion 1
  Curry 1 Teaspoon
  Chicken stock 2 1⁄2 Cup (40 tbs)
  Flour 1 Tablespoon
  Egg yolks 2
  Heavy cream 1 Cup (16 tbs)
  Pepper To Taste
  Salt To Taste
  Watercress 1
Directions

1. Peel and dice apples. Pour the lemon juice over the apples.
2. Chop the onion and saute in butter with apples.
3. Add the curry, stir and brown the apples. Sprinkle with flour and add stock. Let the soup cook over high heat for 10 minutes. Strain.
4. Whip the egg yolks with the heavy cream and add to the hot soup. Turn heat down and add pepper and salt to taste.
5. Cool soup and chill.
