Souper Surprise Barley Soup
|Water||3 Cup (48 tbs)|
|Pearled barley||1⁄2 Cup (8 tbs)|
|Beef bouillon cubes||3|
|Asparagus/Broccoli pieces fresh / frozen, cooked and drained||2 Cup (32 tbs)|
|Low fat milk||4 Cup (64 tbs)|
|American cheese slices||5|
|Ground nutmeg||1⁄4 Teaspoon|
|Black pepper||1⁄4 Teaspoon|
|Bacon slices||4 , cooked crisp and crumbled|
In large saucepan, combine water, barley and bouillon.
Bring to a boil over medium-high heat.
Reduce heat to low and simmer, 50 to 60 minutes, stirring often, until barley is tender and nearly all of the liquid is absorbed.
Stir in asparagus, milk, cheese, nutmeg and pepper.
Add bacon, if desired.
Increase heat to medium-high and cook, stirring constantly, until cheese melts.
