Prepare Meat Broth.
Put 8 cups broth and bread into a medium saucepan.
Bring to a boil.
Cook uncovered over medium heat 20 to 30 minutes, stirring occasionally.
If soup looks too dry during cooking, add 1 to 2 cups broth.
Season with salt and pepper.
Add butter, oil and sage.
Cook 5 minutes longer.
Stir in 1/3 cup Parmesan cheese.
Taste and adjust for seasoning.
