Split Pea Soup

Ingredients
  Dried green split peas 16 Ounce (1 Package)
  Water 2 Quart
  Onion 1 Medium, chopped
  Carrot 1 Medium, diced
  Potato 1 Medium, diced
  Meaty ham bone 1
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Dried tarragon 1⁄4 Teaspoon
Directions

Sort and wash peas; place in a Dutch oven.
Cover with water 2 inches above peas; let soak 8 hours.
Drain peas; add 2 quarts water, vegetables, ham bone, and seasonings.
Bring to a boil; cover, reduce heat, and simmer 2 1/2 to 3 hours, stirring occasionally.
Remove bone; cut off meat, and dice.
Discard bone.
Blend for 30 seconds
Return to soup, and simmer an additional 10 minutes.
