Cream Of Watercress Soup
|Chopped chives/Tops of spring onions||1⁄2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Chopped watercress||4 Ounce|
Heat milk with sliced onion and carrot and allow to stand for some time so that milk absorbs flavour of the vegetables.
Then strain milk.
Heat the fat, stir in the flour.
Cook for several minutes, then gradually add the milk.
Bring to boil, add seasoning, watercress, chives (plus a little yeast extract if wished).
Add lemon juice and serve.
