|Celery stalks||3 , coarsely chopped (Along With Tops)|
|Onion||1 , sliced|
|Dry chicken noodle soup mix||1 3⁄4 Ounce (1 Package)|
1. Simmer turkey carcass, celery, onion, salt, and bay leaf in water in a covered saucepot about 2 hours. Turn turkey if necessary during cooking. Remove carcass.
2. Strip meat from bones and add to broth. Bring soup to a boil and add soup mix. Simmer about 10 minutes. This soup is even better if made the day before it is served
