|Watercress||1⁄2 Cup (8 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Instant chicken broth and seasoning mix||1 1⁄4 Ounce|
|Dehydrated onion flakes||1 Teaspoon|
|Skim milk||1⁄2 Cup (8 tbs)|
Wash the watercress and dry it well.
Chop fine, both leaves and stems.
In small saucepan, combine water, chicken broth mix, onion flakes and salt.
Cook, stirring constantly to dissolve the mix; add skim milk and bring to boiling point.
Stir in chopped watercress, turn off heat immediately, and serve in soup bowl with a sprig of watercress floating on top.
