The BEST Homemade Tomato Soup

This homemade Tomato Soup can be made with any kind of fresh tomato you have - we're just lucky enough to have a ton of heirloom tomatoes grown here in California.

This tomato soup freezes really well, so make a batch or three to freeze, and then you can enjoy the fresh tomato flavor when summer is long gone.

Ingredients

Butter/Olive oil 3 Tablespoon
Shallots 3 , minced
Fresh tomatoes 3 Pound , cored and chopped
Salt To Taste
Pepper To Taste
Pesto 1 Tablespoon (for serving, optional)
Fresh basil 1 Tablespoon (for serving, optional)

Directions

MAKING:

In a stockpot, heat butter and saute shallots in it until translucent or for 6-8 minutes.

Add tomato, cover and cook unti simmered.

Cook for 30-45 minutes and allow to cool.

Blend the ingredients using a blender.

SERVING:

Serve with pesto, basil and enjoy!
