At the Food Channel, when it's pumpkin time, it's soup time. Chef Cari is here to show you one of her fall favorites that includes pumpkin, garlic, and everyone's favorite secret ingredient... bacon!
Bacon | 1/2 Pound , chopped | |
Diced onion | 1/2 Cup (8 tbs) | |
Garlic | 3 Clove (15 gm) , minced | |
Cubed pumpkin | 2 1/2 Cup (40 tbs) | |
Salt | 1 Tablespoon | |
Pepper | 1/2 Tablespoon | |
Vegetable broth | 3 Cup (48 tbs) | |
Bread cubes | 1 Cup (16 tbs) |
MAKING:
Heat a Dutch oven and fry bacon bits in it.
Remove bacon using slotted spoon and set aside.
In same Dutch oven sauté onion in remaining bacon fat until translucent.
Add garlic and saute for one more minute.
Add pumpkin, salt, pepper, broth and simmer until softened.
Puree the ingredients using an immersion blender.
Roast bread cubes in bacon fat.
Garnish soup with roasted bread cubes and bacon bits.
