Creamy Cheddar Cheese Soup
|Butter||1⁄4 Cup (4 tbs)|
|Chopped onion||1⁄4 Cup (4 tbs)|
|All purpose flour||2 Tablespoon|
|Milk||2 Cup (32 tbs)|
|Canned chicken broth||2 Cup (32 tbs)|
|Russet potatoes||2 Large, peeled and diced|
|Packed grated sharp cheddar cheese||1 Cup (16 tbs)|
|Chopped chives/Green onions||1⁄4 Cup (4 tbs)|
Melt butter in heavy medium saucepan over medium heat Add onion and saute until tender, about 5 minutes.
Add flour and stir until just beginning to color, about 3 minutes.
Gradually mix in milk and broth; add potatoes.
Reduce heat to medium low and simmer until potatoes are tender, stirring occasionally, about 20 minutes.
Add cheese and stir until cheese melts and soup is smooth.
Season to taste with salt and pepper.
Garnish with chives and serve.
