Chilled Avocado Soup
|Ripe avocado||1 Large|
|Scallions||2 , cut into pieces|
|Chicken broth||1 1⁄2 Cup (24 tbs), seasoned and cold (375 Milliliter)|
|Lemon juice||2 Teaspoon (10 Milliliter)|
|18% cream||1 1⁄2 Cup (24 tbs) (375 Milliliter)|
Peel avocado and remove the pit.
Drop pieces of avocado into a blender.
Add scallions, chicken broth, lemon juice and nutmeg.
Cover and blend until smooth.
Add cream and salt and pepper to taste.
Cover and chill until icy cold and serve garnished with thin lime or lemon slices and chopped parsley.
