Water Ices Or Sorbets

Ingredients
For clarified syrup
  Granulated sugar 1 1⁄2 Pound
  Water 1 Pint
  Lemon 1 , rind
  Lemon 1⁄2 Large, juiced
Directions

MAKING
1. In a large clean pan, tip in the sugar, lemon rind and water and stir over gentle heat till the crystals are dissolved.
2. Bring to this to boiling point and then stir briskly for ten minutes without stirring
3. Remove the scum and then strain through muslin
4. Leave till cold and then add the strained lemon juice

SERVING
5. Serve cold
