|Lemon||1 1⁄2 , juiced|
1 In a saucepan, combine the water and sugar.
2 Bring to the boil and boil over a high heat for five minutes.
3 Leave to cool.
4 Combine the syrup and fruit juice and pour into a shallow freezing tray.
5 Freeze until the mixture has crystallised, but not completely solid.
6 Whisk the egg whites until stiff.
7 Break up the partially frozen ice and put into a food processor.
8 Process until smooth.
9 Add the egg whites and process until these are incorporated.
10 Return to the freezing tray and freeze until solid.
11 Serve chilled.
