Avocado And Cucumber Sorbet
|Ripe avocado flesh||1 Pound (500 Gram, Soft)|
|Peeled cucumber||8 Ounce (250 Gram)|
|Fresh lime juice||4 Tablespoon|
Put all the ingredients into a blender or food processor, ensuring that you have scraped as much as possible of the dark-green lining of the avocado skins into the mixture, and process until smooth.
If mashing by hand, chop the avocado finely, then beat with an electric beater, or mash and whip.
Make sure that the sorbet mixture is slightly sweeter than you would like the sorbet to be, as the coldness of the finished sorbet will lessen the sweetness.
Spoon the mixture into a freezer container and freeze until firm.
This should not need beating halfway through freezing, but if you can be bothered to do so, the finished texture will be lighter.
