Lime Sorbet

  Sugar 1 Cup (16 tbs)
  Fresh lime juice 1⁄3 Cup (5.33 tbs)
  Lime zest 2 Teaspoon, freshly grated

In a small saucepan combine the sugar and 1 1/2 cups water, bring the mixture to a boil, stirring until the sugar is dissolved, and stir in the lime juice, the zest, and a pinch of salt.
Chill the mixture until it is cold, or quick-chill it by setting it in a larger bowl of ice and cold water, stirring the mixture until it is cold.
Freeze the mixture in an ice-cream maker according to the manufacturer's instructions.
