|Apple juice||17 Tablespoon (1 Cup Plus 1 Tablespoon)|
|Water||7⁄8 Cup (14 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Lemon juice||1 Tablespoon|
Combine apple juice, water, 1/2 cup sugar and lemon juice in small saucepan.
Place over medium-high heat and stir until sugar is dissolved.
Just before syrup reaches boiling point, remove from heat.
Let stand until cool, then chill thoroughly.
Beat egg white until foamy.
Add remaining 1 tablespoon sugar and beat until stiff.
Add syrup and Calvados and blend well.
