Sole Poached With Tomatoes

Ingredients
  Corn oil margarine 1 Tablespoon
  Fresh mushrooms 1 1⁄2 Cup (24 tbs), thickly sliced
  Garlic 1 Clove (5 gm), minced
  Tomatoes 3 , seeded and cut into chunks
  Fresh basil/1/2 teaspoon dried basil 1 Teaspoon
  Fresh thyme/1 pinch of dried thyme 2 Pinch
  Sole fillets 1 Pound
  Canned artichoke hearts 14 Ounce, drained and halved (1 Can)
  Salt To Taste
  Pepper To Taste
Directions

In a heavy saucepan over medium-high heat melt margarine.
Add mushrooms and garlic.
Saute until mushrooms are tender.
Add tomatoes, basil and thyme.
Bring to a simmer.
Add sole and artichokes; cover.
Simmer for 3 minutes.
Uncover.
Cook for 5 minutes or until fish flakes easily.
Add salt, pepper and sugar.
