Sole With Spring Vegetables

Ingredients
  Sole fillets 12 Ounce, cut into 4 serving-size pieces (About 1/4 Inch Thick)
  Pepper 1⁄4 Teaspoon
  Paprika 1⁄4 Teaspoon
  Grated parmesan cheese 1 Tablespoon
  Julienned carrots 1⁄4 Cup (4 tbs) (2 X 1/8-Inch Strips)
  Julienned zucchini 1⁄4 Cup (4 tbs) (2 X 1/8-Inch Strips)
  Grated lime peel 1⁄4 Teaspoon
  Butter flavored mix 1⁄4 Cup (4 tbs) (Reconstituted Natural)
Directions

Sprinkle one side of each fillet with pepper, paprika and Parmesan cheese.
Roll up each fillet with seasoned side on the inside.
Arrange in 9-inch round baking dish, seam side down.
Set aside.
In small mixing bowl, combine carrot, zucchini, lime peel and butter-flavored mix.
Toss to coat.
Cover.
Microwave at High for 2 minutes, stirring once.
Spoon vegetable mixture over fish.
Cover with wax paper.
Microwave at High for 5 to 9 minutes longer, or until fish flakes easily with fork.
Let stand, covered, for 5 minutes before serving.
