Sole With Spring Vegetables
|Sole fillets||12 Ounce, cut into 4 serving-size pieces (About 1/4 Inch Thick)|
|Grated parmesan cheese||1 Tablespoon|
|Julienned carrots||1⁄4 Cup (4 tbs) (2 X 1/8-Inch Strips)|
|Julienned zucchini||1⁄4 Cup (4 tbs) (2 X 1/8-Inch Strips)|
|Grated lime peel||1⁄4 Teaspoon|
|Butter flavored mix||1⁄4 Cup (4 tbs) (Reconstituted Natural)|
Sprinkle one side of each fillet with pepper, paprika and Parmesan cheese.
Roll up each fillet with seasoned side on the inside.
Arrange in 9-inch round baking dish, seam side down.
In small mixing bowl, combine carrot, zucchini, lime peel and butter-flavored mix.
Toss to coat.
Microwave at High for 2 minutes, stirring once.
Spoon vegetable mixture over fish.
Cover with wax paper.
Microwave at High for 5 to 9 minutes longer, or until fish flakes easily with fork.
Let stand, covered, for 5 minutes before serving.
